Roasted Veggies


I can't seem to get enough roasted vegetables lately.

They are so easy to make. I just get whatever looks good at the farmers market, wash it, slice it, toss it lightly with olive oil & sea salt, bake it at 400° until it looks ready to eat. The veggies cook up sweet, soft and a tiny bit carmelized.

Mmm..yummy.

Our latest thing is grilled asparagus. The kicker is...S and I don't like asparagus a whole lot, S hardly at all. But grilled is wonderful. Toss with olive oil, salt, and pepper. Grill for two minutes each side (figure that one out, but that's what the recipe said!). Drizzle with balsamic vinegar.
